If an employer fires me for taking a week off for vacation on a date which the employer doesn't agree to, do they owe me severance if they claim it was for cause? (Employed with same employer for 10 years.)

It will depend on the circumstances and the nature of the discussion that you had with your employer. Leaving work for a week without permission can be considered insubordination, and insubordination can be just cause for dismissal.
