Can I legally make stipulation in my employee contract appearance? For example, no visible tattoos, facial piercings etc? In a medical environment.

Yes, you can implement a dress code policy and regulate appearance, as long as the policy does not discriminate against employees on the basis of a ground that is protected by human rights legislation. Generally speaking, tattoos and facial piercings are not protected by human rights legislation.
