I have a signed 5 year contract with an employer who wants to change my job description. What is the process? What are my rights?

This depends on the significance of the change in your duties. An employer generally cannot impose changes to the terms and conditions of your employment without your consent to same. To do so could amount to a constructive termination of your employment, triggering your severance entitlements.
