I signed a 5 year contract for an employer who now wants to change my job description, has threatened to terminate my employment after less than one year. If I quit what do I need to have in place to cover myself?

This depends on the significance of the change in your duties. An employer generally cannot impose changes to the terms and conditions of your employment without your consent to same. To do so could amount to a constructive termination of your employment, triggering your severance entitlements.

Further, if your employer is creating a toxic work environment and threatening to terminate you, this could also amount to a constructive dismissal of your employment.
